<h3 class="wp-block-heading"><strong>Part 1 of 3</strong></h3>



<p>When Magdalena Stadnicka was diagnosed with breast cancer in 2019, it turned life upside down for her and her partner Robert Wiltshire. The experience led them to re-evaluate their habits and explore <strong>how</strong> <strong>food could support healing</strong> and long-term health.</p>



<p><em>“We realised how much of our everyday food actually works against the body instead of helping it,”</em> says Magdalena. <em>“We wanted to make it easier for people to eat well, and to show that healthy food can also be full of flavour.”</em></p>



<p>Robert, a trained chef, went back to study nutrition and dietary science, and together they began developing what would become <strong><a href="https://www.cleancravingsweden.com/">Clean Cravings</a></strong>. Their goal was clear: to create Caribbean-inspired, flavourful food made from natural ingredients – free from gluten, additives and sugar.</p>



<p>They crossed paths with <strong>Brian Mårtensen</strong>, business designer at Krinova Incubator &amp; Science Park and trained chef with a background in health-focused gastronomy.</p>



<p>Brian tasted their products and saw real potential.</p>



<p><em>“Brian has met us exactly where we are as a small company,”</em> says Robert. <em>“He’s hands-on, full of energy and always finds a way forward, and when he doesn’t have the answer himself, he knows who to connect us with. That support has been invaluable.”</em></p>

<h3 class="wp-block-heading"><strong>Removing barriers to growth</strong></h3>



<p>With Brian’s guidance through the Krinova Start programme, Clean Cravings began <strong>refining their business structure</strong> and exploring new ways to reach customers.</p>



<p>One key insight came early: the high cost of renting commercial kitchens was holding them back.</p>



<p><em>“It became clear they needed a more flexible solution. With their own food truck, they can take their food to where the customers are without relying on external facilities,”</em> says Brian.</p>



<p>Through Krinova’s network, they were introduced to <strong><a href="https://foodtrucknordic.com/">FoodTruckNordic</a></strong>, a company that builds custom food trucks for catering businesses.</p>

<p>The collaboration became a turning point, giving Clean Cravings more <strong>freedom, visibility and opportunities</strong> to meet customers directly at events and festivals across Skåne.</p>



<p><em>“This summer we’ve been travelling across the region serving our food, and the response has been amazing,” </em>says Magdalena. <em>“Now we’re aiming to expand with more company bookings and everyday lunch events.”</em></p>

<h3 class="wp-block-heading">Pilot plant inaugurated in Blentarp</h3>



<p>Dapibuset is based in Blentarp, outside Lund in southern Sweden, where its pilot plant was completed in August 2025. Today, the company has seven employees, some of whom combine academic research positions with their work at Dapibuset.</p>

<p>Exalant and VivoProtect are the newest companies to join Krinova’s Food Incubator. With a focus on sustainability and international growth, they share the ambition to contribute to a more competitive and resource-efficient food industry in Sweden.</p>



<p>Krinova’s Food Incubator gives startups access to business development, networks and test environments, enabling them to build sustainable, competitive business models and reach the market. Being accepted into the incubator is both a mark of quality and an opportunity to accelerate the company’s development.</p>

<li>Based in Vinslöv, Exalant has developed a patent-pending drying system that enables efficient drying of waste and by-products from the food industry while preserving product quality and nutritional content. This enhances output and profitability for food producers by reducing waste and losses, leading to more sustainable food management.<br></li>



<li>VivoProtect, founded by two researchers at Lund University, develops products based on specific probiotic bacterial strains that can inhibit the growth of pathogenic microorganisms in vegetables, increase crop yields, and extend the shelf life of packaged produce. They have demonstrated strong results in both laboratory and field trials, aiming to improve food safety and producer profitability while reducing food waste.</li>

<p><strong>It has been just over ten years since Krinova organised the innovation competition Food Hack for the very first time. Back in September 2014, it was not only a premiere for Krinova but also one of Europe’s very first Food Hacks. With the call “Let’s build the future of sustainable food”, students, researchers and entrepreneurs – indeed, anyone with an interest and commitment to food – were invited. Shaping the sustainable food systems of the future still permeates the competition today, eight Food Hacks later.</strong></p>



<p>Over the years, Food Hack by Krinova has developed into a truly international innovation competition. In total, the competition has attracted more than 300 participants representing around 30 different countries. That mix of expertise and diversity of perspectives is part of what has made Food Hack unique.</p>

<h4 class="wp-block-heading"><strong>More than just an innovation competition</strong></h4>



<p>Food Hack started as a pure innovation competition but has developed into something bigger over the years. Today’s format includes inspirational talks, exhibitions and open activities that attract a wide audience interested in food, innovation and sustainability. Over 48 intensive hours, participants work in teams to find solutions to the challenges they have chosen, presenting their results to an audience and jury as the grand finale. The outcomes impress every time.</p>



<p>Food Hack has sparked strong engagement among participants. For some, it has planted the seeds of business ideas, but perhaps most importantly, it has provided a foundation and a network in their continued roles as entrepreneurs.</p>

<li>Audience choice – a digital platform enabling neighbours to collaborate on grocery shopping to reduce transport between consumer and shop.</li>

<li>First prize – <em>Team Apple Girl</em> – packaging material made from apple pulp left over after juice pressing. A leather-like, fully biodegradable material.</li>



<li>Second prize – <em>Gotland Truffle Challenge</em> – truffle pearls (truffle blended with butter and gel coating), preserving flavour and aroma during heating.</li>

					<description><![CDATA[<p>I’ve just come from Krinova’s annual summer lunch – a much-appreciated tradition for our companies, partners, owners and friends in the network. The plan was to gather outdoors in the sunshine, but the rain had other ideas. Instead, we met at Torget in the heart of the building, our former tank garage, which this time became the setting for our summer lunch. We began with sparkling apple drinks from Must Energy and flavoured popcorn from Popp – products from two of the companies in Krinova’s START programme. This was followed by a quiz walk through the building, a delicious lunch and dessert. And there, in the middle of the rain, we shared not only food and laughter but also valuable conversations about business development, collaboration and sustainable growth. The products are aimed at both private and public kitchens, and are receiving increasing interest from the market. </p>

					<description><![CDATA[<p>Friends gather tightly on the wooden deck. The evening sun pours in, and the scent of lilacs blends with freshly cut grass. Laughter rings out around the charcuterie board, and ice clinks in dewy glasses.&#160; The Scanian beverage house Franka has, quite literally, placed itself at the heart of this wonderful feeling. Their two non-alcoholic aperitifs with a Nordic touch in spring 2025 won gold at the world’s largest competition for non-alcoholic beverages. The journey began in the summer of 2020.&#160; “I had recently been pregnant and realized there was a real lack of tasty non-alcoholic aperitifs,” says Stephanie W Godée, one of the three founders of the family business.&#160; She recalls rushing in to share her idea with her brother Per. They had long bounced business ideas with each other, and now she had found a gap on the beverage shelf. Per also remembers the moment and the excitement.&#160; “All of a sudden, everything just clicked. Stephanie and her partner Efe’s background in the hotel and restaurant industry, and my own experience in fitness and health. <p>Friends gather tightly on the wooden deck. The evening sun pours in, and the scent of lilacs blends with freshly cut grass. Laughter rings out around the charcuterie board, and ice clinks in dewy glasses.&nbsp;</p>



<p>The Scanian beverage house Franka has, quite literally, placed itself at the heart of this wonderful feeling. Their two non-alcoholic aperitifs with a Nordic touch in spring 2025 won gold at the world’s largest competition for non-alcoholic beverages. The journey began in the summer of 2020.&nbsp;</p>



<p>“I had recently been pregnant and realized there was a real lack of tasty non-alcoholic aperitifs,” says Stephanie W Godée, one of the three founders of the family business.&nbsp;</p>



<p>She recalls rushing in to share her idea with her brother Per. They had long bounced business ideas with each other, and now she had found a gap on the beverage shelf. Per also remembers the moment and the excitement.&nbsp;</p>



<p>“All of a sudden, everything just clicked. Stephanie and her partner Efe’s background in the hotel and restaurant industry, and my own experience in fitness and health. And it was an idea that felt meaningful — both for individuals and for society. It was a no-brainer,” says Per Godée.&nbsp;</p>



<p>The fact that their business idea coincided with the global trend of young people drinking less alcohol was, of course, no drawback. Nor was the fact that Stephanie had many years of experience as an Art Director, when it came time to develop the design and brand personality.&nbsp;</p>



<h4 class="wp-block-heading">Krinova marked the starting point of the journey</h4>



<p>The first thing they did was contact Krinova. The food incubator’s experienced business designers help innovative startups evaluate and develop their business ideas.&nbsp;</p>



<p>“Our close collaboration with Krinova, and the absolutely perfect match with our lead mentor Max, has been crucial. He pointed out all the blind spots when we, infatuated with our idea, mostly saw gold and green forests. We got help with everything from realism and budgeting to competitor analysis,” says Per.&nbsp;</p>



<p>That Max had been an entrepreneur in the restaurant industry himself — and happened to be Italian — was a lucky break, considering the Mediterranean inspiration. Krinova’s Max Pattara remembers their first meeting:&nbsp;</p>



<p>“In came three young, creative entrepreneurs with great energy and a strong vision. They wanted to offer people the chance to enjoy the good things in life, without needing alcohol as fuel.”&nbsp;</p>



<p>Max is impressed by the strong and positive brand that Franka has built in such a short time. He also thinks the drinks are exceptionally tasty.&nbsp;</p>



<p>“They brought a lot of competence with them, but we at Krinova have still been able to support them in many ways. We connected them with the right producers, helped them build structure, and to create a clear value proposition,” says Max.&nbsp;</p>



<h4 class="wp-block-heading">From Concept to Flavour</h4>



<p>Product development, in close collaboration with beverage experts <a href="https://balsgardfoodtech.se/en/start/">Balsgård Foodtech</a>, took about 1.5 years, and in 2023, Franka Nordic Aperitif was launched. It’s a classic Mediterranean-style aperitif with a complex bitterness, paired with flavor notes from Nordic ingredients like lingonberries, juniper, and Scanian rhubarb. </p>



<p>“Everything has gone well — at a pace that has felt sustainable for us. The response from both consumers and professionals has been fantastic. This is a journey that takes time, and it feels meaningful to shape it with care and patience. We see Franka as something much bigger than a product and look forward to continuing to build that vision,” says Stephanie, who is especially happy that their business is so hands-on in these hyper-digital times.&nbsp;</p>



<p>“I love working with something that even my kids can understand,” she concludes.&nbsp;</p>

<h4 class="wp-block-heading"><strong>New investors enable further expansion</strong></h4>



<p>The company has now attracted new external investors and capital. According to Kotaiba Aal, the lead investor is an experienced industry profile with a strong background in the food sector and a deep commitment to driving sustainability in food systems. The next step for Angry Camel is to establish its commercial supply chain and prepare for production.</p>



<p>– With new investors on board, Angry Camel can now take its business to the next level and carry out the next steps in its growth journey, explains Max Pattara. We’re really looking forward to following their continued success.</p>



<h4 class="wp-block-heading"><strong>Strong collaborations and partnerships</strong></h4>



<p>Angry Camel targets medium and large industry players, both locally and globally. Several multinational companies have already tested their product and see great potential for integrating it into their food applications.</p>



<p>– We have strong collaborations with leading research centres in Sweden to refine our technology and explore synergies with local Swedish crops that often have limitations in food applications, says Kotaiba. In addition, our partnership with the <strong>Bühler Group</strong> in Switzerland has positioned us as an important player in sustainable food production, he adds.</p>



<h4 class="wp-block-heading"><strong>A sustainable future</strong></h4>



<p>Angry Camel has already received recognition for its innovative solution and was awarded several prestigious prizes in 2024. The company was named ‘Most Sustainable Business Idea of the Year’ by ALMI and Företagarna, won Gold Winner at MassChallenge Switzerland, and Kotaiba Aal was named ‘Newcomer of the Year 2024’.</p>

<p>The term <em>cold chain</em> refers to the sensitive journey of, for example, a kilo of minced meat – from producer all the way to your shopping basket.</p>



<p>– If the chain is broken and the product doesn’t maintain the right temperature, it often has to be discarded – even when there’s nothing actually wrong with it, explains Jacob Petersson, co-founder of Helsingborg-based Foodtel and one of the companies in Krinova’s incubator programme.</p>

<h4 class="wp-block-heading"><strong>From Idea to Innovation</strong></h4>



<p>Foodtel’s innovation represents a small revolution – not least in terms of climate impact.</p>



<p>– Our digital platform is based on the latest research and is already being used by producers, transporters, retailers, and restaurants in Sweden, says Jacob.  </p>



<p>Through a simple interface, users can determine whether a temperature deviation has had a negative impact on the food. In most cases, it hasn’t – or it may mean a slightly shorter shelf life, allowing the product to be used instead of thrown away.</p>



<p>Jacob and Nazih first met while studying business administration at Halmstad University. During a summer break, they ended up working in two different parts of the food industry’s cold chain – one in retail, the other in logistics.</p>



<p>&#8211; One day, we sat down and compared our experiences. We were both struck by the huge amount of food waste, Jacob recalls.</p>



<p>&#8211; We started looking at the bigger picture – the extra work, inefficiencies, complaints, and not least the environmental impact. We realised: there had to be a better way, adds Nazih.</p>



<h4 class="wp-block-heading">Krinova’s Support – From Idea to International Scale-Up</h4>

<p>– Krinova was our very first point of contact. We had defined the problem and believed we had a possible solution.</p>
</blockquote>



<p>Their first meeting with Krinova was online. On screen appeared business designer Massimiliano “Max” Pattara – immediately positive and supportive.</p>

<p>&#8211; Max really believed in the idea and saw the potential. At the same time, he was upfront about the challenges – especially in a slow-moving sector dominated by big players, Jacob recalls.</p>
</blockquote>



<p>Later, Max’s colleague Jens Almqvist joined the process. Since then, Krinova’s incubator has been an important sounding board – from business development to industry contacts. One key connection was to Vinnova, Sweden’s innovation agency, which provided early-stage funding.</p>

<p>&#8211; That enabled us to launch an R&amp;D project in collaboration with RISE, Sweden’s independent research institute.</p>
</blockquote>



<p>It was also Krinova that introduced Foodtel to Novax, the investment arm of the Axel Johnson Group. After a funding round in autumn 2024, the company brought in a long-term strategic partner – setting the stage for serious scale-up. International launch is now underway in Germany, with customers already in Lithuania.</p>



<p>The two founders are also proud of their growing team, including Ellinor, Lars, Danny, and Mouhammed – who bring both drive and expertise.</p>



<p>&#8211; We see our platform as a win-win-win for everyone in the food industry. It saves money, saves food, and reduces climate impact, concludes Nazih Hazime.</p>

<p><strong>Krinova Incubator &amp; Science Park has once again been recognized by Vinnova and designated as one of Sweden’s excellence incubators for the period 2025–2029. <p><strong>What does the designation mean?</strong>&nbsp;</p>



<p>Excellence incubators are part of Vinnova’s initiative to support established, high-quality incubators with clear processes, innovative offerings, and an active focus on sustainability and gender equality.&nbsp;</p>



<p>The designation also comes with funding from Vinnova, allowing Krinova to receive SEK 14.6 million over four years—provided that co-financing of SEK 29 million is secured. </p>



<p>“This represents a fivefold increase in the funding we received from Vinnova during the previous period, which we see as confirmation of the positive development of both the incubator and its companies. Increased funding gives us the opportunity to strengthen our support and the value we provide to companies,” says Massimiliano Pattara, Business Designer at Krinova Incubator.&nbsp;</p>

Their products are now available in over 200 stores and have also achieved major traction in the foodservice sector. <p>A dedicated group of students, a pinch of innovation and some wild experiments in the kitchen led to an unusually successful test product. It has now transformed into the company Plantaste, which is working to create the food of the future from hemp seeds.&nbsp;&nbsp;</p>



<p>Maria Lindahl and Evelina Holmgren are in their final semester of the Gastronomy programme at Kristianstad University. In the spring semester of 2023, they took a course in product development that began with Imagine, an innovation-enhancing workshop organised by the university with the support of Krinova.&nbsp;&nbsp;</p>



<p>“We were assigned a project with the City of Helsingborg and Mossagården where they were interested in introducing hemp into school meals in some way,” says Evelina Holmgren.&nbsp;</p>



<p>The group and the clients started brainstorming ideas and soon decided to try making a form of tofu. Tofu is usually made from soya beans, which have a nutritional content similar to hemp seeds in terms of fat and protein. They were therefore curious whether it would be possible to use the seeds in the same way as the beans.&nbsp;&nbsp;</p>



<p>When they went into the kitchen and experimented, they found that it worked perfectly.&nbsp;</p>



<p>“It was love at first sight when we made the first block,” says Maria Lindahl. “The flavour wasn&#8217;t quite there, but the texture and appearance were so good!”&nbsp;&nbsp;</p>



<p>Creating a product in the kitchen was just one aspect of the course. They also went through all aspects of product development, from concept development and potential customers to finances and market research.&nbsp;</p>



<p>At the end of the course, their teacher told the group about Krinova, and Plantaste got a place in Krinova START. That teacher was Johanna Gerberich, and in September this year she changed jobs and became a business designer at Krinova. This means that she has been able to watch Plantaste grow from a student project to a new company.&nbsp;&nbsp;</p>



<p>“This is an example of how we can use the power of a school assignment and show that what they do during their education is relevant,” says Johanna Gerberich. “Turning their ideas into reality is one of my biggest motivators.”&nbsp;&nbsp;</p>



<p>The work Plantaste has done within Krinova START was to some extent similar to what they did during the course.&nbsp;&nbsp;</p>



<p>“It was a bit like starting over and going through all the phases of product development again, but with more knowledge this time,” says Maria Lindahl.&nbsp;&nbsp;</p>



<p>“You can now understand why it takes three years to create a product,” adds Evelina Holmgren.&nbsp;</p>



<p>The group has also had the opportunity to present their product to Axfood, find contacts and find out where they can apply for funding to develop the product.&nbsp;</p>



<p>“The support we’ve received has been invaluable,” says Maria Lindahl. “We wouldn’t have even known where to start otherwise. They’ve guided us, encouraged us, and sometimes pushed us. We are learning all the tools we need and we will carry that knowledge with us in the future.”&nbsp;</p>



<p>This is the first time any of them have done anything like this, and along the way they have found both the confidence to develop their ideas and a desire to create more new innovations.&nbsp;&nbsp;</p>



<p>“It’s easy to assume that people won’t want to hear your ideas,” says Evelina Holmgren. “I’m so surprised that people around me are so supportive and think it’s cool when someone is brave enough to do things.”&nbsp;</p>



<p>When asked if they have other ideas they are thinking about, Maria Lindahl nods eagerly:&nbsp;</p>



<p>“I think I always have been full of ideas. That’s probably why I think it’s so much fun to finally do something with one of them!”&nbsp;</p>

This is something Max Rosenberg, founder of Recoma, knows firsthand.  </p>



<p>Max Rosenberg saw an opportunity to create a product that could reduce emissions and give new life to discarded waste. The result was construction boards made from packaging consisting of several different materials, such as milk cartons. These boards can be used for everything from interior walls to furniture and contribute to a more sustainable construction industry.&nbsp;</p>



<p>“It’s passionate people who choose our boards,” says Max Rosenberg. “The ones who are truly passionate about sustainability.”&nbsp;&nbsp;</p>



<p>The company was founded in June 2021, and the first board was produced in Hässleholm in February 2023.&nbsp;</p>



<p>“We hired the first person in production in March this year, and now we have ten people working in three shifts,” says Max Rosenberg.&nbsp;&nbsp;</p>



<p>Max Rosenberg founded Recoma together with Fredrik Rosenberg, who handles sales; Tobias Stihl, who is responsible for production and logistics; and Henrik Lennartsson, who handles the financial aspects.&nbsp;&nbsp;</p>



<p>The four founders complement each other with different skills sets and experience. And even though they had a clear plan for Recoma and knew what they needed to do, they contacted Krinova to see what possibilities there were for the company to get some kind of support.&nbsp;&nbsp;</p>



<p>Recoma was accepted into the Krinova SCALE programme, which is designed for already established companies that want to grow. There, they worked with business designer Niclas Persnil.  His approach is that you never build companies, you develop the people who, in turn, build the companies.&nbsp;</p>



<p>“I think it&#8217;s magical to first see the entrepreneurs and then their companies grow and develop,” he says.&nbsp;&nbsp;&nbsp;</p>



<p>In Krinova SCALE, Recoma has been working on sharpening pitches, developing its business plan and business model and, not least, building up its core values.&nbsp;</p>



<p>“It’s in the back of your mind that these are important things that must be included sooner or later, but you rarely get the chance to do them yourself,” reflects Max Rosenberg. “It’s easy to focus on the urgent, day-to-day stuff to ensure the company’s survival.”&nbsp;&nbsp;</p>



<p>“But you shouldn’t underestimate what someone else can contribute,” he continues. “We all agree that sometimes you need someone who asks different questions.”&nbsp;&nbsp;</p>



<p>For a few months, the entire company met at Krinova almost every Monday. These meetings proved to be important because it was one of the few times when all four founders had time to meet together during the intense phase the company was in.&nbsp;&nbsp;</p>



<p>The meetings have welded them together and made the vision for the company clearer.&nbsp;&nbsp;</p>



<p>“The biggest thing we’ve gained is an understanding of each other’s differences,” says Max Rosenberg.&nbsp;&nbsp;</p>



<p>Niclas Persnil also underscores the importance of having a common foundation for the company to have the best possible conditions for success.&nbsp;&nbsp;</p>



<p>“For a growth company, it is important to have a team that works well,” he says. “The situation is difficult and the company vulnerable if a single person has to manage everything.”&nbsp;&nbsp;</p>



<p>Even though Recoma is affected by the economy and developments in the construction industry, Max is optimistic about the company’s future.&nbsp;&nbsp;</p>



<p>“We are a small manufacturer, and everything we’ve produced we’ve managed to sell,” says Max. “Right now, we’ve stopped production in order to install new equipment that will allow us to double our capacity.”&nbsp;&nbsp;&nbsp;</p>

<p>“We know how the substances we research work, which allows us to get more people to directly benefit from our research results. Moreover, we have already developed a test prototype for the studies, so why not turn it into a real product?” says Michaela Sundqvist, CEO of Vegitific.&nbsp;</p>



<p>Vegitific previously used the founders&#8217; research to develop a nitrate-rich drink that has positive effects on the athletic performance. The new product, “Broccoli Sprout”, is a drink created from broccoli sprouts, bursting with beneficial glucosinolates. These were found to reduce lactic acid, improve performance and reduce oxidative stress in athletes who are training hard.&nbsp;</p>



<p>The results of the research study, led by one of Vegitific’s founders, Filip Larsen, were published in a scientific journal in September.&nbsp;&nbsp;</p>



<p>The strong link to research also makes it easier to make adjustments to the product as new research findings emerge. The first study involved very fit people, but a new study shows that it also works for regular exercisers.&nbsp;</p>



<p>“New results show that it can produce an effect if you drink it three hours before a workout, even at lower doses than we initially tested,” says Michaela Sundqvist.&nbsp;&nbsp;</p>



<p>In 2022 Vegitific, based in Stockholm, was offered to be part of Krinova´s incubator programme.</p>



<p>It was the collaboration with Balsgård that led Vegitific – a Stockholm-based company – to contact Krinova. This then led to them being accepted into the incubator programme in 2022.&nbsp;&nbsp;</p>



<p>“Krinova’s incubator is aimed at food and food product companies throughout Sweden,” says Jens Almqvist, business designer at Krinova. “We have an open application process and an admission process that rewards companies with a high level of innovation and a focus on sustainability.” &nbsp;</p>



<p>Through Krinova’s established contacts, Vegitific was able to make a second prototype of “Broccoli Sprout” at Tetra Pak in Lund. This has been a big step towards launching the product.&nbsp;&nbsp;</p>



<p>“The packaging that we have on our website is something I had a picture of in a presentation a year ago. And now it’s available in reality!”&nbsp;</p>



<p>Krinova offered Vegitific much more than just support in the form of contacts with collaborative partners and support for branding and PR strategies. Michaela Sundqvist emphasises how important it has been for Vegitific to receive external support from someone who looks at the company as a whole.&nbsp;</p>



<p>“We still work mainly as researchers, and Krinova has been a great support in being able to cover other aspects of the business side and provide important advice to move forward,” she says.&nbsp;&nbsp;</p>



<p>“Research takes so much time, so it’s especially important to have support and encouragement from someone who is monitoring the current status of things,” she continues.&nbsp;&nbsp;</p>



<p>At the end of November, Vegitific also went to the technology and start-up event Slush in Helsinki together with Krinova.&nbsp;&nbsp;</p>



<p>“It was incredibly enriching to talk to other companies and hear about their journey,” says Michaela Sundqvist.&nbsp;&nbsp;</p>

<p>Roger’s idea was born eight years ago. The precise nature of Roger’s idea is still a bit of a secret, as he is in the process of developing and designing his invention. But it is technology that can save energy in cold rooms.&nbsp;&nbsp;</p>

<p>Roger Gilistrand could not forget the positive feedback he received from the first trial and decided to give his idea one last chance by visiting a business fair at Everöd Airport in 2022. It was there that he met representatives from Krinova.&nbsp;</p>



<p>“I didn&#8217;t have very high expectations for that day – maybe that I would come across something that could help me move forward.”&nbsp;&nbsp;</p>



<p>It turned out better than he could ever have imagined.&nbsp;</p>



<p>Roger Gilistrand describes it as if the way forward for Cold and Dry was blocked by a high wall that he did not know how to get over. When Krinova came into the picture, the wall turned into a staircase.&nbsp;&nbsp;&nbsp;</p>



<p>“Now I didn&#8217;t have to get over the whole wall at once. I could divide up the path and take one step at a time.”&nbsp;&nbsp;</p>



<p>For the past 18 months, Roger Gilistrand has been part of both Krinova START and then Krinova INCUBATOR. Thanks to this, he now has a toolbox full of tools that he can use as he navigates the business world.&nbsp;&nbsp;</p>



<p>“They&#8217;ve helped me match up with stakeholders, they&#8217;ve been a sounding board and given me tips and advice,” says Roger Gilistrand. “It’s great to feel the support and that someone believes in your idea.”&nbsp;</p>



<p>Massimiliano “Max” Pattara is the business designer who Roger Gilistrand works with at Krinova. Max emphasises that it is not him and his colleagues who do the work for the entrepreneurs. It is the entrepreneurs who have to put the work in.&nbsp;&nbsp;</p>



<p>“Roger has done a fantastic job and he has shown that he has the qualities needed to become a successful entrepreneur,” says Max Pattara. “He listens and is both stubborn and flexible at the same time.”&nbsp;&nbsp;</p>



<p>Through Krinova, Roger has also been able to get help from another incubator: Ideon in Lund. Ideon has the technical expertise needed to develop a prototype for Roger&#8217;s machine.&nbsp;</p>



<p>“Krinova has extensive experience and knowledge in the food sector, but building a device with all that it entails is not directly in Krinova’s wheelhouse. It is, however, in Ideon&#8217;s, which has contributed its technical expertise and contacts in the field.”&nbsp;</p>



<p>The next step for Cold and Dry is to develop a trial prototype that will be a model for a scalable prototype. A lot of work remains to be done before the product can be made available for sale. Nevertheless, Roger Gilistrand is satisfied.&nbsp;&nbsp;</p>



<p>“When you ask someone on their deathbed what it is they most regret, it is often what they didn’t do rather than what they did. If I hadn’t had the courage to take a risk and test this idea, I would have really regretted it.”</p>

<p><strong>Dapibuset</strong> – offers an alternative to soybean-based feed that can also be produced directly on the farm by the farmer. With their technology, they solve the complexity of finding a sustainable feed that meets the protein and amino acid needs of the animals, but does not compromise growth performance, local availability and cost-effectiveness for the farmer.</p>



<p><strong><a href="http://www.remeatfoods.com">Re:meat</a> </strong>– is currently building Scandinavia&#8217;s first local production of cultured meat. This is groundbreaking technology that has the potential to revolutionise the food industry and offer an alternative to traditional meat production with a reduced carbon footprint. Re:meat is a co-incubation with Medeon. </p>

<p>Agneta Påander is a leading expert in business-driven sustainability work and has a lengthy career in senior positions in the food industry, including as Sustainability Director for Orkla Foods Sweden. Agneta has worked both globally and locally.<br>Johanna Gerberich has extensive experience in the food and restaurant industry and comes most recently from a position as a lecturer at Kristianstad University. &nbsp;Johanna has solid experience in collaboration, skills enhancement linked to the food sector, and food research.<br>Brian Mårtensen has spent most of his professional career developing meals of the future together with researchers. He has also worked in industry, tasked with making large-scale food production healthier. Brian has been running a number of his own businesses for many years. In recent years, he has focused on product development and innovation solutions for new and established companies.</p>

<p>Chefs Ola Secher and Jared Christensen are the brains behind Nothing Fishy. Ola specialises in molecular gastronomy and has several years of experience from various leading positions in food service and retail. Jared previously ran the company Ekko Gourmet.</p>



<p>In March 2021, they started experimenting at home in their kitchens in Vadensjö (outside of Landskrona) and Malmö to find a good vegan alternative to fish. After many hours in their kitchens, consumer tests confirmed the success of their work. Families and children aged 4–12 who were selected to test the products gave the thumbs up. </p>



<p>“We tested our ‘fish’ on children first, not only because they are an important target group, but also because they are the most critical and give honest answers. Many children have told us that this is the best fish they have ever eaten, which is a good rating,” says Ola with a smile.</p>



<p>Just a few months after the first experiments at home in their kitchens, Ola and Jared were ready to start production. In Simrishamn, they found a good partner to get started. </p>



<p>“It is a challenge to go from a 150 g to a 200 kg test run. Everything has to be right – speed, temperature and time. As little as one gram of error can make the difference between perfect nuggets and semolina porridge,” explains Ola.</p>



<p>But everything has gone according to plan. In Simrishamn, they are now producing nuggets, burgers and fillets.</p>



<h3 class="wp-block-heading">Flavour and consistency<br></h3>



<p>Taste, texture and nutritional content have played a key role in product development. The products are based on wheat starch, algae, water and rapeseed oil. They also contain a full omega-3 oil from algae and are enriched with vitamins such as B12, selenium and iron.</p>



<p>“In terms of nutrients, the products have 1.6 times more omega-3 than the equivalent white fish,” says Ola.</p>



<p>Just over 1.5 years ago, Nothing Fishy launched its products in food service. Today, the brand is served in restaurants as well as schools.</p>



<p>Nothing Fishy is now ready to take the next step. They aim to launch in grocery stores after the summer. During the spring, they brought in two investors who contribute both capital as well as experience and networks. With an injection of capital, they are ready to start building a sales organisation and invest further in marketing. </p>



<p>“I am convinced that the vegan fish will be a big seller, especially to families with children,” says Ola.</p>

<p><strong>First Swesen, then the world</strong><br>The team behind the incubator company Franka Drinks – Per Wredenmark Godée, his sister Stephanie Wredenmark Godée and her husband Efe Akol – are all connected to the restaurant industry. They are a close-knit team with a wide range of experience and expertise in the form of creators and designers, business intelligence and solid experience in sales. Early on, the team had a clear picture in their heads of the drink they wanted to create. Turning it into the product that has now been launched has been an exciting two-year journey. The collaboration with Balsgård Foodtech and Fredrik Beskow has been an important piece of the puzzle in recipe development and getting the flavour just right.  </p>



<p>“There has been a lot of testing, balling ideas back and forth, and focus groups. We have taken a long-term approach, and the concept we have developed should feel as viable in five years as it does today,” emphasises Per.</p>

					<description><![CDATA[<p>In 2022, Krinova provided innovation and development support to 150 entrepreneurs. In the same year, 18,000 participants attended the various meetings and conferences organised at Krinova, bringing meeting activity back to pre-pandemic levels. At Krinova AB’s General Meeting on 13 April, the company&#8217;s financial accounts and balance sheet were adopted. Turnover for 2022 amounted to SEK 24 million, which is an increase of SEK 2 million compared to last year. The purpose of Krinova’s operations is not to make a profit, but to create growth in the companies that Krinova works with. 500 jobs were created in the companies supported by Krinova in 2021 and growth, measured in turnover, has increased by 40 percent over the past five years. Based in the local business community, Krinova’s mission is to increase the attractiveness and growth of Kristianstad and northeastern Skåne. <p><span class="ingress">In 2022, Krinova provided innovation and development support to 150 entrepreneurs. In the same year, 18,000 participants attended the various meetings and conferences organised at Krinova, bringing meeting activity back to pre-pandemic levels.<span class="ingress"></span></span></p>



<p>At Krinova AB’s General Meeting on 13 April, the company&#8217;s financial accounts and balance sheet were adopted. Turnover for 2022 amounted to SEK 24 million, which is an increase of SEK 2 million compared to last year. The purpose of Krinova’s operations is not to make a profit, but to create growth in the companies that Krinova works with.</p>



<p><br>500 jobs were created in the companies supported by Krinova in 2021 and growth, measured in turnover, has increased by 40 percent over the past five years.</p>



<p><br>Based in the local business community, Krinova’s mission is to increase the attractiveness and growth of Kristianstad and northeastern Skåne. In parallel, Krinova has developed a unique regional and national position in the food sector.<br></p>



<p>“Krinova’s core issues in innovation, food and sustainability have become increasingly relevant to society and are burning issues. 2022 was characterised by supporting companies, industries and regions to find new paths for green transition, self-sufficiency, competitiveness and innovation. We have also contributed by working in major projects &#8211; together with other societal actors – to drive development in a number of different areas, such as climate-smart solutions and sustainable solutions in a local context, promoting collaboration in the food sector, and public innovation leadership,” says Christian Nyhlén, CEO of Krinova Incubator &amp; Science Park.</p>

– In the WISA project, Krinova has been able to build and test different business models that will also be used in future projects, says Max Pattara, business designer at Krinova who together with Jan Persson leads the project&#8217;s workshops.</p>

It is an advantage to meet physically because you can interact with the participants in a different way, and it is easier to capture their issues. It becomes more dynamic and provides a nice energy, Jan concludes.</p>
