A sustainable solution for the food industry
The recent crisis in the egg industry has highlighted the importance of robust and sustainable solutions for food production. When traditional supply chains are under pressure, alternative and less vulnerable systems become crucial. Malmö-based Angry Camel, one of the companies in Krinova’s incubator, has taken on this challenge by developing an innovative chickpea-based alternative to egg whites.
Chickpeas as an alternative to egg whites
Roughly two-thirds of all eggs used globally go to industrial food production, such as mayonnaise and baked goods. Finding an alternative that can replace eggs without compromising on quality or cost has long been a challenge. Angry Camel’s solution – a protein extract from chickpeas, branded ChickBumin® – offers a functional substitute that can replace traditional egg whites in many food applications.
Angry Camel is run by Kotaiba Aal and his co-founder Bakr Jahhan. They have developed a new technology that transforms chickpea seeds into a protein extract with properties similar to egg protein, while significantly reducing the off-flavour often associated with legumes.
– Chickpeas are not only nutritious but also one of the most accessible legumes on the market and come without the allergy risks some other ingredients have,” explains Kotaiba Aal. By replacing egg whites with our protein, ChickBumin®, we help make the food industry less vulnerable – while freeing up eggs for direct consumption.
– At Krinova, we’ve supported Angry Camel with business development and advisory services, and it’s been fantastic to follow their progress and achievements, says Massimiliano ‘Max’ Pattara, Business Designer at Krinova Incubator.

That’s what entrepreneurship is all about – finding the right path through trial and error, says Kotaiba Aal. Krinova also introduced us to Skåne Ventures, through which we gained access to vital funding that became key to our success, he continues.
New investors enable further expansion
The company has now attracted new external investors and capital. According to Kotaiba Aal, the lead investor is an experienced industry profile with a strong background in the food sector and a deep commitment to driving sustainability in food systems. The next step for Angry Camel is to establish its commercial supply chain and prepare for production.
– With new investors on board, Angry Camel can now take its business to the next level and carry out the next steps in its growth journey, explains Max Pattara. We’re really looking forward to following their continued success.
Strong collaborations and partnerships
Angry Camel targets medium and large industry players, both locally and globally. Several multinational companies have already tested their product and see great potential for integrating it into their food applications.
– We have strong collaborations with leading research centres in Sweden to refine our technology and explore synergies with local Swedish crops that often have limitations in food applications, says Kotaiba. In addition, our partnership with the Bühler Group in Switzerland has positioned us as an important player in sustainable food production, he adds.
A sustainable future
Angry Camel has already received recognition for its innovative solution and was awarded several prestigious prizes in 2024. The company was named ‘Most Sustainable Business Idea of the Year’ by ALMI and Företagarna, won Gold Winner at MassChallenge Switzerland, and Kotaiba Aal was named ‘Newcomer of the Year 2024’.
